Crockpot Swamp Potatoes
Tender potatoes, smoked sausage and green beans slow cooked with butter and Cajun seasoning. An easy, hearty dinner or side dish.

- 3 lb baby gold potatoes
- 1 medium yellow onion
- 14 oz smoked sausage
- 1 lb fresh green beans
- 4 cloves garlic
- 1 packet onion soup mix
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ cup unsalted butter
- 2 tbsp fresh parsley
Add the potatoes and onion to the bottom of the slow cooker.
Mix the onion soup mix, Cajun seasoning, smoked paprika and pepper in a small bowl. Sprinkle half over the potatoes and toss.
Add the sausage and green beans on top. Sprinkle with the garlic and the rest of the seasoning.
Spread the butter pieces over the top.
Cover and cook on LOW for 6 to 7 hours, stirring once or twice in the second half, until the potatoes are fork-tender.
Taste and add salt only if needed. Rest uncovered for 10 minutes, then sprinkle with parsley and serve.
- HIGH setting: cook for 4 to 5 hours.
- Don't add salt until the end. The sausage and soup mix are already salty.
- Using canned green beans? Drain only half the liquid.
- Using raw sausage? Brown it until fully cooked before adding.
- Lighter version: use chicken sausage and ¼ cup butter plus ½ cup low-sodium broth.
- Store leftovers in the fridge for 3 to 4 days, or freeze for up to 3 months.
