Ingredients

Main Dish

  • 4 Cups cooked rice, warm (day-old best)
  • 1 lb thin-sliced beef (ribeye or hotpot beef)
  • 1 medium onion, sliced
  • 1 Cup corn
  • 2–3 tbsp butter
  • 3 green onions, chopped
  • Black pepper, to taste

Pepper Lunch Sauce

  • 4 tbsp soy sauce
  • 3 tbsp honey (or brown sugar)
  • 2 tbsp oyster sauce
  • 4 cloves garlic, minced
  • 1–1½ tsp black pepper
  • 1 tbsp mirin or rice vinegar (optional)

Instructions

  • Make sauce: Mix all sauce ingredients in a bowl.
  • Cook onion: Heat a large skillet on medium-high. Cook onion 3–4 minutes.
  • Crisp rice: Add rice, press into the pan, and let it sit 1–2 minutes.
  • Add toppings: Add beef, corn, butter, and green onions.
  • Sauce + finish: Pour in sauce, sizzle 1 minute, then stir and cook 1 more minute (until beef is just cooked). Serve hot.
