- 1 cup rice (or quinoa)
- 1 cup black beans, drained
- 1 cup corn
- 1 avocado, sliced
- 1 pint cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp garlic powder
- Salsa + cheese (optional)
Cook rice per package
Season chicken with cumin, garlic, salt
Cook chicken in skillet 6-8 min
Mix rice with lime juice + cilantro
