Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup rice (or quinoa)
  • 1 cup black beans, drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salsa + cheese (optional)

Instructions

  • Cook rice per package
  • Season chicken with cumin, garlic, salt
  • Cook chicken in skillet 6-8 min
  • Mix rice with lime juice + cilantro
  • Divide into 4 bowls: rice base
  • Add chicken, beans, corn, tomatoes
  • Top with avocado + salsa
  • Store 4 days or freeze
