Ingredients

  • 8 large eggs
  • 1/2 pound turkey sausage (crumbled and cooked)
  • 1 cup black beans (drained and rinsed)
  • 1/2 cup shredded cheddar cheese
  • 1 red bell pepper (diced)
  • 1 small onion (diced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin (optional)

Instructions

  • Cook turkey sausage in skillet until browned. Set aside.
  • Sauté onion and bell pepper in olive oil for 5 minutes.
  • Whisk eggs, pour into skillet, scramble until just set.
  • Warm tortillas in dry skillet or microwave.
  • Layer cheese, eggs, sausage, and beans on each tortilla.
  • Fold bottom up, sides in, roll tightly.
  • Serve immediately or wrap in foil for storage.
  • Storage: Fridge 5 days, Freezer 3 months
    Reheat: Microwave 2 min or Air Fryer 8 min at 370°F
